• Prep the Meat: Slice or dice the Spam into bite-sized pieces.

• Crisp the Spam: Heat oil in a large non-stick skillet over medium-high heat. Add the Spam and fry for 3 to 4 minutes, stirring occasionally, until the edges are nicely browned and crispy.

• Whisk the Eggs: While the Spam cooks, crack your eggs into a bowl and whisk them well.

• Combine: Turn the heat down to medium-low. Pour the eggs directly into the skillet with the Spam.

• Scramble: Gently fold the eggs and Spam together until the eggs are cooked to your liking (about 2-3 minutes for soft curds).

• Serve: Remove from heat, season with black pepper, and garnish with cheese or chopped green onions if desired
